Breakfast Quesadillas

What a treat these are! This one is for a griddle or a cast iron pan on the grill.

  • You’ve got to have some kind of meat and basically it all works – bacon, sausage, ham, corned beef, brisket, etc. Use some left over meat from last night’s meal or use deli-sliced turkey breast or ham as an easy options. It works great for breakfast.
  • Since we’re not dealing with a large tortilla, most of the fixins should be cut up in rather small chunks or diced.
  • I always start with onions and mushrooms as they seem to take a little longer to cook down. Put them in the pan with a little butter or oil – use just enough so they don’t stick.
  • Go ahead and add your spices – you can never go wrong with salt and pepper. Flare it up with some crushed hot peppers or throw in some turmeric.
  • Finally add the meat. For this recipe we’re using deli turkey and ham.
  • Once you get the turkey and ham browned and vegetables cooking, then add freshly diced tomatoes to cook down any water that may be in them. This will only take 2 or 3 minutes. Mix it all well.
  • Now you add the beaten eggs in and stir up the mix. You will have to find your perfect egg-to-fixins ratio.
  • Right when the eggs are done and you’re about finished, it’s time to add finely diced red/green/yellow/jalapeno peppers/spinach – any or all that you like. Put them in last so they maintain their crunch.
  • Take the mix off the fire and put it in a large bowl to fill your tortillas. Keep the griddle or pan hot.
  • Now, use 8- or 10-inch flour tortillas. You may have to warm them on the flat surface or in a microwave, just briefly to get them pliable.

Build your quesedillas:

Cheese first! Lay the tortilla flat and sprinkle some cheese on half of it. Use your favorite cheese, but I always favor extra sharp cheddar. You want a cheese layer on the bottom and then a couple of tablespoons of the eggs on the same half. Now is the time to sprinkle more cheese on the eggs and take a knife and kind of chop it in the mix. Fold the empty tortilla half over and press it down so everything kind of mashes together. Don’t press hard enough to make it fall out. You can also pinch the rounded side of the tortilla ends together.

Now get it on the flat top. Use the Burger Boss spatula to pick it up and place it on the heat and again push it down with the spatula to get as much surface area of the folded tortilla on the heat source. Turn it after a couple minutes until the tortillas are lightly browned. Repeat for all tortillas.

Enjoy an amazing breakfast quesadilla. Serve with a slice of tomato or avocado and some fresh salsa!
